Ingredients | Cheesy Ensaymada Red Ribbon

4 large zucchini, halved and cut lengthwise into 1/8-inch thick slices

4 tablespoons extra-virgin olive oil

½ clove garlic, minced, or more to taste

6 leaves fresh basil, torn

6 pinches salt

4 pinches freshly ground black pepper

Directions

Combine zucchini slices, olive oil, garlic, basil, salt, and pepper in a bowl. Mix well, cover, and refrigerate for 6 hours.

Transfer everything including liquid to a large saucepan over high heat. Cover and cook until just tender, about 2 minutes. Remove with a slotted spoon.

I serve this by placing the zucchini on a plate, topping with the chicken breasts, and adding a dash of tomato dressing on top of that.
