It's a little spicy, but the sour cream and cheddar balance out the flavors perfectly.Ingredients | Pumpkin Soup Jamaican Style2 tablespoons olive oil1 cup chopped onion1 red bell pepper, diced1 yellow bell pepper, diced1 orange bell pepper, diced½ cup diced jalapeno peppers2 cloves garlic, minced1 pound ground turkey4 cups chicken broth2 cups pumpkin puree2 cups shredded Cheddar cheese, divided1 (8 ounce) can tomato sauce1 large tomato, diced1 ½ tablespoons chili powder1 tablespoon garlic powder1 tablespoon onion powder1 ½ teaspoons red pepper flakes1 teaspoon salt½ teaspoon ground black pepper½ teaspoon ground cumin½ cup sour creamDirectionsHeat olive oil in a large saucepan over medium heat. Saute onion, bell peppers, jalapeno peppers, and garlic until tender, about 10 minutes. Stir in turkey and cook until no longer pink, about 5 minutes.Mix in chicken broth, pumpkin puree, 1 cup Cheddar cheese, tomato sauce, and tomato.
