Place pita pieces into the skillet without crowding. Fry in batches until golden brown and blot dry with paper towels.Combine cucumber, tomatoes, red onion, parsley, mint, olive oil, lemon juice, sumac, garlic, salt, and ground black pepper in a bowl.
